Basic physical protection build, can swap out mantle for urchin if your team is doing really well or spirit robe if getting hard cc'd. Can swap out masamune for hastened katana for more aggression. Sell boots and buy new speed potion for 2k before going into last item. Can swap out atalanta's bow for witchblade or executioner (preference)
Teleport for first relic, 2nd relic is preference (blink for aggression and wings/shell for defense). Buy wards and upgrade teleport relic after 4th or 5th item

If you choose transcendence, make sure it is your first or second item (swap for berserker shield or incorporate berserker later for 4th item and remove void/runic shield)
Quick and easy guide to follow along for Erlang Shen, feel free to experiment with the items listed above and see what works for you. Nothing in this guide is set in stone and will depend on your game, your opponents and your play style. Be sure to check the notes associated with each of the builds for additional info.
Use otter to move through enemy waves to cause damage to all minions, cancel out right after you push through the archers and either use pin ability to take them out immediately or pop your 1 ability for more damage overall. I would only recommend using pin ability for archers after you get cdr items in case you need to pin the enemy to get away or pin for a kill.
Use otter for solo lane aggression, moving around map and team fights if you can win them. Turtle for team fights if they are going to be close or trying to get away from enemy. To combo an enemy, pin with 2 ability first, use 3 to otter up to them, then 1 followed by basic attacks to hit hard and very fast. Ultimate ability is a taunt/heal after a few seconds so if you are about the same health as your enemy, don't be afraid to ult them to prevent them from getting away.
