Hun Batz is very mana hungry early, so get 2 Mana Potions.
Getting Jotunn's Wrath will grant you 40% CDR within your first 4 items, allowing you to spam Fear No Evil. This build also goes Hydra's Lament to combo with Infused Strikes in a hybrid ability + auto attack playstyle.
Mantle of Discord replaces Warrior Tabi after you get Elixir of Speed lategame.
Mantle of Discord is built last for the passive, as it works as a out-of-jail card if things go south, despite overcapping CDR. If you don't want to overcap CDR, replace Jotunn's Wrath with The Crusher or Brawler's Beat Stick after getting Mantle.
Bloodforge replaces Warrior Tabi after you get Elixir of Speed lategame.
Brawler's Beat Stick can replace The Crusher if you need anti-heal.

Your skill order I don't really agree with. Mostly because you only grab 1 lvl in your ult. You are aware you add .25 seconds extra duration on it so longer teamfight disruption. The extra lvl in your 3 instead of 2 can be considered a preference point, however I prefer the 2 for the reduced CD
And yes, I know that each point on his ult increases its duration, but I dont find it as valuable as having more damage on his main combo (3+2).
Pretty solid builds overall I'd say. This is also how I am building him this season, although I have noticed the SPL pros electing to forgo building Transcendence and rushing other items instead. I like how the item feels at our level of play though.
For extra Situationals I would also include Magi's Cloak and perhaps Void Shield.
However, what I really want to talk about is that all these builds have one big problem. None of them include Stone of Gaia, which is arguably one of the strongest items in the game right now. I've been running it on all of my Hunters lately, and Assassin's like Hun Batz get great use of it. For example, his first ability is a leap, so he can knock himself up to proc Gaia's passive. Plus it gives u like 400 health. I hope it sees a nerf in Patch 7.5.
