This Start gives you good extra mana, health and physical Power. The new starter also lets you gain extra damage against buff camps and an extra amount of health for giving the last hit on camps. With this you will have Jotunn*s Wrath before Hydra's Lament which can be good for early games because it has 10 more Physical Power. As starting Relic i always choose Meditation but you can choose one of the other's if they are more likely to your playstyle.
So for the starter you can pick one of both if you decide to upgrade. The Spear basically allows to kill Firegiant on your own on lvl 20. This is quite a big advantage if the whole enemy team would have to come and kill it. The Hammer gives you extra protection and pushes the passive of Hun Batz himself and Hydra's Lament even more which is really usefull on our beloved Monkey.
You can also start with Morningstar to get Hydra's Lament earlier but you will sacrifice 5 extra physical power which can make a difference in early games. But this start allows you to star with an extra health potion.
So this is the order after staring with Hydra's Lament. I recommend using the other start if you are not that experienced with Hun Batz and his passive. Using Hydra's Lament early cann be dangerous if you dont know how to proc it's passive correctly.
I Only recommend going Heartseeker instead of going Jotunn's Wrath if you feel very confident in playing conquest and know exactly how to farm quick since its very high price.
Qin Sai's may not fit for everybody or every situation so here are some options for it.
So this isn't only for giving you more Cooldown those Items are also helpful in getting a decent amount of extra protection. Keep those Items also in mind if you are struggling with surviving teamfights in late game.
In Joust you should start with Death's Toll and Upgrade it later since this mode is Fight based then running through a Jungle. The rest Of the Build is pretty much the same such as it is with the optional Items. And dont buy boots in Joust you don't really need them i think especially when you can jump as far as Hun Batz can.
So the skill order is really important at the beginning. You have to start with Sacred Monkey in order to get quick wave clear through your passive. After having your Ultimate its important to max. Overhand Smash because this is the ability with which you will deal the most damage and finish enemies off. After that being done you can decide which ability is more important to you. I recommend skilling Sacred Monkey to max. second and then the Fear No Evil. Somersault is basically your best way to evade from a fight, always keep that in mind so its not that much a damage ability in the first place.
